A B O U T

     Peak Farms is a small scale indoor farm in Gypsum, Colorado started by Dave Curulewski and Chace MacDermott that specializes in growing gourmet mushrooms, microgreens, and edible flowers. Dave and Chace met working in Vail and started bouncing ideas off of each other on how to bring healthy, sustainably grown food to the local community. After talking about common interests and gauging the barrier to entry of some of these areas of interest, they decided to start growing microgreens in Dave's apartment bedroom in December 2020.

 

     What began as a hobby ended up blossoming into a small business. After giving our microgreens away to some local chefs, we started to receive feedback that we were growing high quality greens and realized there was a real market to the local high end restaurants. In Febrauary 2021, we decided to register as an LLC and make this thing real! From there, we found a small indoor space on the second floor of a retail building. By the summer of 2023, we had outgrown that space and found a large commercial unit in Gypsum and decided to make the move. At that point, we were able to expand the microgreens and pursue growing mushrooms on the scale we had been dreaming of. In the summer of 2024, we finally had the space, time, and support to start bringing gourmet mushrooms, dried mushrooms, mushroom tinctures, mushroom powders, and microgreens to our local community in addition to the restaurants we had been servicing for the past few years. This has been an amazing experience thus far and we cannot wait to see where it goes from here!
